Drying racks, for the harvest of Cod, that will come later in the year. Dried Cod has been a big export for Norway for many centuries. It is a delicacy that the Norwegians enjoy. and very proud of . Often used in special creations for celebratory meals. I have to admit that it isn’t to my taste, but maybe I haven’t enjoyed it at its culinary best.

Many Norwegians take fierce refuge in the adage “In cod we trust.” My lineage is also fully Norwegian, and although I do enjoy it in some of its culinary forms, the traditional lutefisk is definitely not among them.

Nor to mine….. we also sampled some dried cod ‘Crisps’……. even worse to my un-educated taste buds 🙂
